Cotman are very good paints, and if you are starting out in watercolor, they will serve you well for several years or longer. Professional grade paints are more highly pigmented, so you'll use a smaller amount of the paint, and get a more pure color; and the colorfastness is greater (it maintains its original color hue longer).
