Q: So the beans are un roasted. Does it mean I need to roast them in order to remove the hard shell, and then roast again to enhance the flavor?

The beans arrive dry and crunchy like roasted coffee beans ( but not as bitter) with no really hard outer shell. Being retired now, I'm home and use them mostly as I would other raw or dry-roasted nuts for snacking, but I grind a few to put the powder in my coffee with chia seeds, protein powder, coconut oil. Yumm, practically a meal....and wonderful aromas. I dip fruit in the ground powder....bananas are a sweet soft contrast, berries, even apples. You can dip the dried whole beans in coconut oil or peanut butter to " sweeten" a bit as a crunchy snack if they seem too bitter or dry to you. I don't make traditional candy with them or roast them because I enjoy their lack of processing. Today, I put the beans in the hollow centers of fresh raspberries atop slivers of Swiss cheese. Yummy texture contrasts and pretty nutritious, I hope. Here's to a wonderful chocolate adventure of your own! Sorry I don't know about the roasting processes.

I don't ferment the beans. they come fermented. they are fermented in colombia in the sun..or from where they are picked.

Q: How is the fermentation done

the white paste that surrounds the Bean..is exposed to the sun...and the beans ferment naturally ..leaving the raw, husk covered bean to be slightly roasted and peeled to reveal the raw cacao inside. It will many times crumble into "Nibs" as its handled when the peeling process is taking place. Those nibs are the Earthy wonder of Nature and That is the basis for "Cerimonial Cacao". The Real Deal. There are wonderous natural benefits to raw cacao. Do a little research on those benefits.

I use these crunchy beans daily, not for candy or roasting, but as a snack . I grind some to powder to put in coffee with chia, protein powder and coconut oil. Yummy. Dip sliced fruit in the ground bean powder or put the whole beans in hollow raspberries for a contrast in flavor and texture. Chocolate with cheese is good too. Enjoy.

Tasty and fun

While we will probably continue to buy cocoa powder, these beans are all kinds of fun and are especially good in baking. The best no-bake cookies in my life were made with these guys. Not so much drinks; maybe we weren't grinding them fine enough, but there were some intense chunks.
