I like Chinese mahbodofu, for which I buy the flavoring sauce, available in Japanese and other stores with oriental foods, and the softest tofu I can find (though some might prefer it firmer). It really tastes better with some ground meat in it, but I find that the feeling of the granules of TVP completely make up for the lack of meat, so maybe it is the chewing feeling, rather than taste that is really the point here. Because TVP is pretty much without flavor, so it will go with anything. If anyone wants to try mahbodofu (which may have various spellings, but sounds like "maa-bo (rhymes with Santa's 'ho-ho-ho ')-dough-foo (as in 'fool'), here is how I make it: Reconstitute as much TVP as you like and drain off the excess liquid; start with less and work up to more the next time if you like it. Heat some cooking oil in a big frying pan (I like virgin coconut oil) and saute some chopped onions or sliced green onions. When they are nearly done, add the reconstituted TVP (keep stirring while you warm it), then a cake of tofu cut in cubes, and then the sauce in the mabodofu packet. Heat everything to the heat you want for eating it. I like to stir it while heating in this last step, too, as I rather like the tofu to be broken up smaller. But if you like it to keep its shape, use firmer tofu and stir carefully. Reconstituted TVP also works very well in vegetable-based spaghetti sauces to imitate hamburger. You'd never know they contained no meat!
