This is a very versatile warmer. You can use it without any pans (I use it to keep pizzas warm or with my own baking dishes for lasagna), with the three pans and frame that come with it, with two steam half pans and the frame, and with one steam full pan with the frame. It fits perfectly. I have a nicer looking chafing dish, but this is my go to every time.

Q: Are the stainless steel pans safe in the oven to flash warm the food before placing on the tray? I would flash warm them at 450 degrees for 10 minutes

Yes, the pans are safe in the oven. Use mitts.
