Q: Is it normal for the 25 year to have a strong metallic aftertaste? The flavor is great but the metallic aftertaste makes me think something is wrong.

I did not experience a metallic aftertaste. How do you store it ? I wouldn’t think it would get rancid. I keep it in a cool dark place. I use it sprinkled on roasted vegetables like brussell sprouts, asparagus and broccoli, which also have a strong flavor.

Q: Does the 25 year vinegar need to be refrigerated after opening?

No; it doesn’t need to be refrigerated. You won’t be disappointed with this balsamico, it is the best Italy has to offer. We are on our 3rd bottle. Use sparingly as a finishing ingredient or all by itself. Don’t waste this by adding it as a cooking balsamic, use a lower grade for that. It it amazing drizzled over the top of finished cooked items, especially vegetables and red meats. Also our favorite is to drizzle it over a high quality vanilla ice cream.
