Good question. It is my understanding that ube is a purple YAM (Dioscorea alata) Sweet potatoes are a completely different plant (Ipomoea batatas) and it appears to me that most of the products being sold as ube are actually purple sweet potatoes.

Is this made from raw or cooked sweet potatoes? i'm hoping it's cooked and then freeze dried.
