Q: Will this chill water enough for distilling?

We use this unit to chill a water cooled resistance welder machine. This water circulates from the chiller unit, to the firing system, to the electrode tips that actually make the weld, circulating back to the unit.

Q: Does this just plug into the wall?

Yes. Just a normal 3-prong plug.

Q: Can this run just 1 laser or does it have to be 2? I have one laser now, but may get another one, and would prefer to just use one chiller.

I run one 80W laser from my OMTech CW-5202 Dual Industrial Water Chiller. I also liked the option to run 2 lasers and the ability to add standard R410a refrigerant.
