From what I remember the casing is a bit wet, but needs to be soaked overnight before use.

casing comes cleaned and shipped in salt just rinse off the salt instructions on pack Kindest regards Joe

They do have a Best Before date on. Ones I bought at the beginning of November have a best before date of August 2023. The packet also says they will keep for up to a year if kept sealed in the packet.
