Sharp
Really good knifes especially at this price point. The handle is plastic and a bit cheap feeling, but the blade itself is hella sharp and makes everything easy to cut through

Yeeeesss.
I work in food prep for a large catering service and am basically cutting things all day, every day. My old knife, a pretty decent Victorinox 8" chef's knife, had been sharpened so much that it no longer had a bevel to its edge, and it'd gotten to the point where it was hard to cut through even a cucumber, let alone a tomato or the skin of a red pepper.This thing is superbly sharp when you get it, and the double bevel blade makes sharpening on a rod sharpener so quick, effortless and - most importantly - super effective. Five takes on a Fine rod for each side and it's practically like the first time you cut with it. I fell in love on my first use and the intimate nature of my knife's and my relationship has only blossomed further even since. I take it everywhere I go - to work, home, the store, the playground, my kid's school, the bathroom, my ex's bed (she couldn't get past the nature of this new relationship, so we had to make some sacrifices... but damn, were they clean cuts!)... I just can't get enough of it. I've actually gone so far as to finally consider settling down and tying the knot. So if anyone knows of any good quality diamond sheaths for the best damn knife I've ever met - and believe me, it deserves only the best - then get back in touch with me. It's finally time to move on to the next stage of my life. With Knife, the best damn knife there is.

Spine is thinner than it used to be
I own several knives from this line including another 10" cook's knife that I bought years ago from a kitchen supply store. I love those. Even as I've added much more expensive knives to my collection, my old 10" knife with the white plastic handle is the first one I always reach for.I recently ordered this one as a gift. When it showed up, the thickness of the spine was significantly thinner than the one I bought years ago. I assume the company has changed their design over the years. I wound up keeping it for myself and getting a different knife for the gift.Now both 10" knives are in the knife block. Even though the handles are identical, I can immediately tell whether I have the old or new one just by how it feels in my hand. I would still reccommend the knife, but be prepared. If you're an old fan of Dexter-Russell, this is a cheaper version of what you bought 10 years ago.

Excellent, large knife to solve 99% of your kitchen needs
So far as a home cook, this has gone through everything I've thrown at it with no difficulty. This ranges from harder cuts such as potatoes, or making butterflies of uncooked chicken to more delicate cuts such as thinly slicing a tomato. I have a sharpening rod I use weekly to resharpen/realign and I never felt the need for more than that. I personally appreciate that there's no pomp, buzzwords, or other pointless marketing: its a simple product that does exactly as you'd wish it to for a reasonable price and that's how it presents itself.

Dexter Chef’s Knife
Great product. Came sharp and with a good edge. Very easy to re-sharpen using a butcher’s steel. Dexter makes great knives and I highly recommend.
