Q: Is this headset noise cancelling?

Not in the traditional sense. If you turn it up really loud then you probably couldn't hear anything else but yeah, not noise cancelling I'm afraid.

Q: Are the ear muffs swappable? I don't like the dark purple but don't know if you can change them by buying swappable colours

Yes they are swappable, only issue you'll have is that they are a nightmare to put on due to the corner designs at the bottom I believe.

Q: Can you remove the microphone?

You can remove the microphone but microphone is not flexible but it's a very good mic nonetheless
