Amazing professional bar knife
I work at a high-volume craft cocktail bar and like the chefs and cooks in our kitchen, our bar staff is expected to provide our own cutlery. My coworkers use everything from cheap Henckel Internationals and serrated bread knives from the local restaurant supply store to Opinels, Wusthoffs, Shuns, and the Cocktail Kingdom Ikuras. Nonetheless, every time I share a station with somebody they all reach for my knife first. Originally they were intrigued by the odd-looking design, but once they used it they were hooked.First of all, the steel on this thing is amazing. When I purchased it several years ago it was delivered shaving-sharp, and its edge retention is wonderful. I have to sharpen it about every 2-3 months, which isn’t bad considering how many dozens to hundreds of times a day it is used and how frequently I unintentionally slam the blade against the stainless surrounding my cutting board when it gets busy. Luckily it also takes an edge pretty easily on a good set of waterstones.The design is great for citrus; it is perfectly sized to tackle any sort of slicing whether it is thick wedges or more detailed work, such as razor-thin wheels to float on top of a cocktail. The tip works great for notching and removing seeds, and this little thing is sharp and controllable enough that I can even get a wonderful citrus peel if I misplace my Y-peeler in the middle of a busy Saturday night service.The only downsides are when it comes to working with larger fruit like grapefruit or pineapples, but that’s unavoidable with a 4” blade on any knife. Any larger and it would lose a lot of its ability to do more detailed work. Oh well, I guess that’s an excuse to pick up the larger Murphy/Cannon bar saw to throw in my tool roll.

Bartender’s must have
I love this knife. I bought this after using it at my sister’s house. Her husband has converted their garage into a full bar and uses this knife to cut citrus fruit, primarily. Well made, very sharp, and is the perfect tool for the job.

Well made, razor sharp, weirdly satisfying to use
I love good kitchen knives and was skeptical about this one. The blunt tip seemed weird to me. Having used it now for a few months, I find myself reaching for this knife every time I need to cut citrus; it is extremely well-crafted, nice in the hand, and the blunt tip lets you draw through citrus without needing to get knuckles down to the cutting board, etc. Strangely pleasing to use.It also comes razor sharp, which I appreciate. Even if I did take off a veeerrrrrrry thin slice of my thumb tip the first time I used it (which was probably on the third G&T of the evening, so my bad...)

Damn Fine Blade
Second purchase, this time for a friend. I was a little skeptical at first, feeling it in my hands, but after over three months of use nearly daily at my bar it’s still wicked sharp and an absolute workhorse. I use it for various fruit garnishes as well as shaping large cubes for cocktails and whiskies. If you’re worried about the price tag, don’t be. It’s a heck of a lot better than using those crappy pairing knives that dull out after a week or less. Plus, it’s sexy as hell.

did not find the value
Was so pumped to get this knife for our bar. The one we received was not "razor sharp" as other reviewers reported. It's ok for thick citrus peel garnishes, but even for that I prefer to just use a XO peeler. We have all turned back to our old knife for cutting fruit, etc.

Very good blade
Bought this to add to my bar kit for work and it is absolute fire. The blade comes sharp enough that you only need to sharpen it if you’re obsessed with pressure slicing tomatoes. It makes quick work of citrus and makes taking the pith off of a peel a cakewalk.

Great Bartenders Knife
Awesome bartenders knife. Very useful and have gotten many compliments about it. My coworkers asked where they could get one since I always carry mine on my person. A little on the high end for a bartenders knife but well worth the money. I highly recommend it.
