Almost perfect
Been hunting for this for a little while and never even thought to look on amazon! Broadly the product is fine, flavour is really really lovely, far better than Pancetta but for some reason not all the fat would render down so my carbonara was left with some lumps of just fat which wasn't so nice.

THIS IS A SCAM
Bought 2x 250g pieces of guanciale. 218g and 196g. Both are almost entirely (probably 80%) fat and a large portion of the 196g piece is completely inedible/unusable for cooking. £15 for around 400g of pork fat. SCAM.
