Hard to use, split when cooked
I bought these 28 mm edible bovine collagen casings to make some boerworst, traditional Southern African sausage. It needs to be thicker than most sausages and includes a number of spices and garlic, ground down with the meat. I had bought some collagen casings on a previous occasion and they worked nicely - not this time. It is a bit of a trick getting the tube on to my sausage maker but once achieved, the sausages seemed to be produced quite nicely. All was fine until I cooked them. Whether I fried or grilled the sausage the collagen casings split and shrivelled in the pan / on the grill. This may just have been a poor batch but next time, I will get hog-skins from our local butcher.
