Ease of use
I bake A LOT!! The ease of using these dried egg whites means not sacrificing fresh eggs all of the time simply for the whites. The whites do not have an "unnatural" taste to them, so I have actually used them for yolk-free omelets. I haven't tried making a Pavlova with them...yet. Great addition to a busy cooks kitchen pantry.

Good for meringue
We’ve been worried about bird flu and generally of the quality of fresh eggs. These pasteurized dry eggs solve that problem. They are pure enough to make meringue with. That’s saying something because one bit of yolk will cause merengue not to fluff, many egg white products don’t meet this standard.

Excellent product for baking. Better than actual eggs!
Great solution for baking! I bought it to make French macarons and I loved it! No need to deal with real eggs and separate yolk and whites, just add the powder and mix in water - fluffy egg whites are ready! Doesn't have a smeel really, nice texture, great size if you use egg whites fairly often.Didn't notice difference with real egg, just easier to work with and stays fresh way longer.Would buy again!

Works well in cocktails. Keeps well, no off flavor, good foaminess when shaken, nice mouth feel. Price a bit steep, but it will probably last a while before I have to decide it l if it's worth buying more.

I use it when making an at home Orange Julius style frozen drink. Makes it easy to make a less calorie dense frozen beverage since the egg white allows you to whip air into frozen beverages.
