sharp thin knives will chip. It's in their nature - the steel is very hard. A softer knife will bend and blunt. Treat your knives well. Don't put them in a dishwasher. If you're cutting something with bones in it use a softer blade.

Q: Is the knife nsf approved?

Didnt see that but NSF approval mostly applies to Food Service wares not for retail items in most cases.
