What is the purpose of the butter and stock?

Butter and stock are for additional flavoring. Duck is a very oily meat, and would clash with the dryness of the turkey without the additional flavoring and oil from the butter that keeps it from washing right through the meat.

States "10 ounce or 15 ounce average...". Is this a typo? What should it say for weight?
