Roasting Pan surfac
As a devoted owner and cook with Mauviel stainless steel and copper (both modern and vintage) I’m sadly disappointed with this particular roasting pan. I cook with my pans daily and don’t get hung up on them being spotlessly clean. The interior pans surface has an etching of sort I’ve haven’t seen on any of my other pans. It’s not a nonstick surface, but a noticeably different one. Immediately apparent is the difficulty of cleaning it. Am used to simply soaking my other Mauviel SS pans briefly and after a quick rinse the pan is clean. This pan however after soaking will not clean easily, even after scrubbing. They don’t make em like they use to.

Lovely but BIG
This is a whole lot of pan. It is big, and it is HEAVY. That said, it is also very beautiful, durable, and versatile. It is my first piece of Mauviel cookware but the mirrored finish matches my All-clad pots perfectly and I prefer the design to All-clad's (and others') roasting pans. I tend to roast chickens and turkeys directly on the oven rack, and upside down, as this allows the hot air to circulate around the bird and with the breast on the bottom, it self-bastes and does not dry out. If you haven't tried it, it is amazing! However, I never thought I needed a roasting pan until I exploded some pyrex positioned on the rack under the bird to catch drippings. Now I use this pan, with some potatoes and onions thrown in, then serve the bird in it after taking them from the oven. Works great, looks great. I am also inspired to venture into more roasting after buying this. It can also be moved to the stovetop to reduce gravies, sauces etc. I have yet to try this but plan to. It cleans up really nicely and the mirrored finish isn't too hard to get shining. With some pieces, you practically have to polish them to get them to look like new but I washed and dried as usual and it is still shining.Bottom line, it is definitely an investment pan but will serve me well for years to come (and likely my children and grandchildren as well).

I was surprised at how heavy (solid) this roasting pan is.
This roasting pan is certainly among the best that you can buy and its the best I've ever bought. I purchased the larger size (15.7 x 11.8) which is as large as I'll ever need. The roasting pan is solidly built and it is heavy. The 5 ply construction accumulates the heat and radiates it back which may not be as important in an oven but I'll also use it on a covered grill for a ham or prime rib or pork roast. Because of this pan's heavy construction if you take the pan juices to the stove top you should not have any hot spots to burn the gravy or the jus.My package came with a roasting rack which I was not expecting because of what other reviewers said (and the product photo did not show it).I don't think that you can find a better roasting pan, more expensive maybe, but I don't think any better than this one. As someone has already said, "this will be the last one I'll need to purchase" and I should have bought this one first. It would have saved me some money.

The best is just good enough
It's a well worth, lifetime investment you pass on to the next generation! Never need another roasting pan if you treat her like your girlfriend (follow instructions!). Fits over 2 burners when doing stove top stuff with even heat and, in size and performance, a no brainer in the oven. Love the big handles. It's rather heavy, although, I am a small person - so that's personally - the quality and benefits are worth the extra lift. A solid piece of hardware!

The final one
I have been through a number of roasting pans with varied and unsatisfactory results. There are no hot spots in this pan. It went from oven to stovetop and performed beautifully in/on both. The handles will stay cool on the stovetop, but obviously don't expect this in the oven. It cooks evenly and really is very simple to clean up afterwards . Very highly recommended.

Great quality.
If there was a time when the saying "you get what you pay for" is true, this is it. I bought this roasting pan for Thanksgiving and did a test run with this pan. This pan is worth every penny! It is made of high quality metal and cooked the turkey beautifully! I would recommend this to family and friends.

Great Pan
Pan goes does great double duty in the oven and on the stove top after. Perfect pan for meat roasts and turkeys.

Masterpiece.
You won't find a better roasting pan than this! It's heavy, it's totally flat bottomed, it won't warp, heat distribution superb so no hot spots, and you will produce the best roast potatoes and meat joints of your life! If you love cooking and appreciate what a difference your tools contribute to your passion, you have to have at least one of these, and currently they are selling for something akin to half their original price.

If the Copper Mauviel is a Lambourghini, this is a Rolls Royce.
Looks the part. Feels the part. Has a good 'weight' to it.Hopefully will never need to buy another one. (Which at this price is pretty much essential).Steel rather than the flashier-but-pain-in-the-arse-to-clean copper means it can go in the dishwasher, but strudy enough to go on the hob for rendering down those juices.

You get what you pay for . Absolutely the best in every way . Looks amazing , performs brilliantly and goes in the dishwasher . I hate the French !!
