The black chia may not always look aesthetically appetising in certain meals compared to the white. How to use white chia seeds White chia seeds can be used in many ways to supplement the diet with extra omega-3, protein and fibre. When added to water, much like flax seeds (linseeds), chia swells and surrounds itself with a soft, flavourless gel. This makes it suitable for adding to juices and smoothies as they are less likely to sink to the bottom.
