I am new to sprouting, do these need to be sanitized before growing?

Actually, if you look closely at the instructions on the bag (see closeup photo) it suggests to go to an FDA link on the NOW website. The link outlines a method of sanitizing the seeds before sprouting with a heated solution of hydrogen peroxide. This is to reduce the chance of dangerous bacteria like e coli, listeria and salmonella that have been linked many times to commercial sprout production. These outbreaks have have resulted in thousand of cases of severe illness worldwide and numerous deaths. The warm humid conditions that sprouts are grown under are ideal for the proliferation of bacteria.

Where are these organic Alfalfa seeds grown?

It just states that they are grown in US.

I was curious as to if these were winter or spring seeds?

These seeds are meant to be sprouted indoors all year around.if you are wondering whether they are meant to be sown as a winter or spring cover crop, I think it would make more sense to just buy organic alfalfa cover crop seeds from a gardening/seed company.

Can i eat the seeds? the package says for sprouting but i am looking for an alfalfa product i can just eat without having to do anything further.

I seriously doubt they are toxic in any way, but I'd suggest you confirm that independent of online opinions. Otherwise, I have read here and there that lightly roasting edible seeds to enhance flavor while ramping up nutrients somehow. (Again, check this opinion out before running with it.) Then you can pulverize them in the blender and add to smoothie (a couple tablespoons of powder, I'm guessing). The main rule is that the roasting must take place just prior to consumption for highest nutrient content. Note: "roasting" is just stirring lightly in an ungreased skillet on stovetop over medium heat for a few moments,; when you start smelling something good, they're done! Remove from heat and place in a shallow bowl til cool, stirring occasionally. You might be able to store in fridge in a jar for a day or so, but instructions usually state for highest nutrient content, roast 'em as you need 'em. FYI, sprouted seeds can be added into baked nut breads, salads, soups, sammiches, and taste great, and sprouted seeds have extremely high nutrients compared to unsprouted (or roasted). Good Luck!
