We raise and market Narragansett turkeys. For a 15 pounder, I'd say 3 tablespoons of butter (I prefer Kerrygold) and a couple teaspoons of poultry seasoning. Mix thoroughly and rub the breast, legs, wings and thighs. Forget the back, as it will just increase the likelihood of rubbery skin in that area. Then I apply a liberal shot of freshly ground black pepper and a healthy dose of Kosher salt. I pop it into a 450 degree oven for 30 minutes, then reduce temp to 325. Cook to 165 in the thickest part of the thigh area.

No, poultry seasoning is not the same as poultry seasoning blend. Use poultry seasoning in your stuffing. You can use the poultry seasoning blend in the stuffing but it will not taste the same as classic stufffing.

I have a Cajun chicken recipe I want to try and they recommend this seasoning. Is it "blackened spice"?

In my opinion, no. Its a great spice but I wouldn't consider it something I would use in a Cajun recipe!
