can this be used to help preserve food for winter? once its dry can i put it in jars?

I hung this up in the garage to dry chillies. Then put them in an air tight container. Worked well.

Is the netting dense enough to protect from fruit flies?

I use mine mainly for herbs, it is good for greens also and dries them well, but only in the summer. I hang mine on the washing line. Don't think I would try anything else. This is from the UK, so weather is not very good.
