No, dashi isn't listed as an ingredient. (Ingredients : Water, soybean, rice, salt).

If you keep it refrigerated virtually "forever". It is a fermented (ie. living) food, which means that as time goes by it continues this fermentation process. So, basically it behaves very similar to cheese. As it ages the taste gets more intense. Once it spoils you will smell it immediately.
