Is it shelf stable until you open it?

Yes, I found it to be perfectly fine tasting after having it sit on the shelf for a month after receiving it in the mail. I believe it has a long shelf life.

Can I freeze this product? If so, can I freeze in its original packaging?

I have frozen it in its packaging & it turned out just fine. I also have left in in my meat drawer in the fridge for months (even past the expire date) and it cooked up just fine.

Why does this one need to be refrigerated and not the swiss knight fondue? whats the difference

I don't know the answer to that, but I refrigerate/freeze all my packaged fondues.
