Q: What if im using a smaller brewing vessel? Will this be too large?

Thank you for the interest in our goods. This heater will work with almost any fermentation vessel up to 8 gallons. Unfortunately, we can't foresee whether our product will be too large for your particular vessel, sorry.

Q: Will this be able to hold 90 degrees at ambient temp (70)?

In this case you need to adjust the necessary temperature (90 degrees) initially. An automatic safety shut off occurs if the probe reads 108F which not only helps avoid ruining a brew by killing the yeast, but also reduces the risk of a burst vessel.

Q: Can the probe be tucked between the heating pad and vessel, rather than inside the vessel.... and still get an accurate reading?

Thank you for the interest in our goods. Yes, you can use the probe in such a way, too. In this case, you'll have the temperature of the heating mat instead of the contents. Therefore we recommend attaching the heater to the vessel.
