Any issue cooking on high heat?
I normally soak overnight and cook all beans on high heat for about 2 hours and they result in soft creamy texture. However, these beans are still s bit crunchy after cooking them for 2 hrs high hear. Is there a reason for that? Are they supposed to be cooked on low heat to achieve softness?

Bob's got to big for their britches so....
Since Bob's red mill decided they were entitled to quadruple their price just for kicks i found these to try. The price isn't quite as good as Bob's was previously but these are organic so I'm willing to tolerate the extra dollars. So far I've only pressure cooked them. They do burst even pre soaked but so long as your gentle taking them out they firm up once cooled and you hardly notice.Very creamy, soft skins, makes for excellent hummus or nut free vegan sauces (think white bean Alfredo). Love them as a side, in pasta, or soup. All around great. I resealed them in 1lb batches so hopefully they will stay fresh.

I love the overall taste and that they cook quicker than other brands I have tried.

The beans were delicious and I do want more!
I bought 3 pounds of these beans. The 1st pound I cooked and I added salt in the beginning and they were hard. I had to cook them a long time. Then I read an article about cooking dried beans and it said not to add the salt until after the first 40 minutes so the second time I cooked them they were delicious. I was surprised the beans were from China though. We really do rely on China way too much though. Dang it!

great soup
I slice up thin, a half package of raw bacon. In soup pot... add a container of organic bone broth plus water to equal x2 the height of the beans, the sliced bacon, a cut-up large onion, 2 tblsp. dried parsley, a few thin sliced carrots, black pepper and garlic. I don't soak the beans (1 pound). Bring all to a boil and then low simmer for about 5-6 hours. Finish by adding about a teaspoon of salt. Awesome soup. We all love it. Healthy and cheap.
