Is there a lens cap for the lens hood?

No but you can fit a slim UV filter in it so you don’t have to use a lens cap

Can the hood be attached to the camera without the adapter ring? And can the hood be attached to the adapter ring without attaching a filter in betwe?

No. The Hood cannot be attached without the adapter ring. The hood must use the adapter ring that is included. Yes. the hood can be attached to the adapter ring without a filter. That is optional. Step 1: Remove the trim ring from the X-100V Camera. Step 2: Install the adapter ring included with the lens hood. Step 3: OPTIONAL. You may install a 49mm size filter of your choice if you want. Not necessary. But it makes the camera weather sealed. Step 4: Screw the Lens Hood to the adapter ring that you installed first that is included with the lens hood. Adjust until the lens hood is horizontal and straight. IT IS SUPER EASY.

I use a promist and a UV filter, would this fit over both of them?

No. It only fits one filter. You CANNOT stack more than one filter.
