What is a convenient way to burn this incense? I'm used to the incense that has a stalk on the end.

The way I like most to burn these are in ash. Fill a heat safe container with a few inches of white ash (you can find it here on Amazon) or with incense sand, and insert the incense stick just far enough so that it stand up on is own. It will completely burn up this way even down into the ash.

I remember the moss garden scent being brown sticks... have they changed that or am i just crazy?

You are NOT crazy. They are consistently brown in the Moss Garden 35 sticks that burn for 1hr. The Moss Garden 200 sticks that burn 30 min are green. They appear to have similar scent. Maybe the green a bit more sweet scented.
