Approx. 1.0" Mine is not a perfect circular hole for the core. But it works.

Q: Does this cut through potatoes?

I use it for apples with no problem although you have to press down hard. The blades really could be sharper. I suppose it will cut a potatoe since both apples and potatoes have about the same hardness
