Arrived a week early exactly as described.
Glestain T type knives are high quality professional grade Japanese stainless steel (Accuto 440). I use these knives everyday as a professional chef. Glestain's original innovative non-stick grind is still the best pattern in the business which many other brands imitate poorly. To surpass these knives for sharpness/edge holding ability you need to buy high end carbon steel hardened to rockwell 65+ by a family that used to make katanas at 3x-5x the price. Bearing in mind that slightly better blades exist for enough money my opinion is that a better handle/non-stick blade grind cannot be had at any price.

Very good deboning knife.
I don’t have nothing negative to say about the knife. It’s 4 knife that I’m taking of this brand, so yeah I’m super satisfied
