Google "erythritol" and "lumps" and you would find that pure erythritol forms lumps. Therefore, you should be wondering about the purity of what you bought if it is not. But still, I want to know the country of origin of Antony's Erythritol.

Is this Powder like? Or more like normal crystals erythritol?

Powder-like. Very, very close to regular 10X sugar. It does tend to clump a bit, so prepare to either sift or put it through a food processor. All-in-all, I don't know what I'd do without it, since I bake for diabetics.

Does confectioners sugar change baked goods that call for granulated sugar?

In some recipes confectioners sugar will make the baked goods smooth, where granulated could be a little grainy. If it calls for granulated I'd say it is safe to use granulated. Personally, I like to experiment when cooking.
