Does anyone know what the difference between the 2 different versions of these scissors is?

The 95 05 10 is 160mm with a crimping area for ferrules up to 6.0mm dia The 95 05 155 is 155mm without the crimping area and a slightly different handle design.

Does this come with a holster

Yes, It comes with a hard plastic holster that could clip on your belt if you want. They do however take two hands to remove them as they are a snug fit.
