warm lager yeast
This yeast is the best for your continental style pilsners and lager beer. I have used it twice and fermented at relatively high temperatures. In fact, the first batch, I pitched at a ridiculoud 80 degrees (but cooled it down to 60 within a couple hours. the other batch, I fermented the entire time between 60-65, dropping down to 55 at times and then plunging it into lagering temps (sub 40). Every drop of beer it makes has been clean, crisp and delicious.I think a key to my success was making a 2L starter and stepping it up at least two times. I had airlock activity within a few hours in both batches. Don't be afraid to go warm with this yeast. It really can handle the temperatures that the label says it can. Your beer will ferment faster and be ready to drink sooner without sacrificing flavor.
