I have a Zwilling Pro 8" Chef knife. It is a very good knife (check out the reviews) and is a great deal at $120. I have used both knives (the Dexter and the Zwilling) for over a year now. I almost feel guilty when I choose the Dexter over the Zwilling about seventy-five percent of the time. It is perfect for thinly slicing onions or tomatoes, or any medium to light weight job. The vegetables do not stick to the knife, due to the Santoku style indentations. By the way, I classify this knife as a Santoku/Chef hybrid. Both knives are extremely sharp, and are easy to keep that way with a good steel, which I use after each washing (by hand, of course). Now when I have a heavy duty job, such as cutting up a chuck roast for grinding, I immediately go to the Zwilling. I really don't need another chef knife, which is depressing as I would love to spend a few thousand on hand made masterpieces.

A wonderful knife
I have used the traditional white-handle Dexter-Russel knives for years and have found them to be excellent--my current 9" white chef's knife has been going strong for over 10 years. This knife of the newer "v-lo" series is even better.The knife has an excellent hand feel. It's handle is very comfortable to grip and is sufficiently offset from the blade to keep the knuckles on my fairly large hand from hitting the cutting board while roll-chopping. The slightly rubbery grip material gives good traction even with a wet hand.The blade is shaped well for general chopping tasks, and the "granton edge pattern" (i.e. small ovals ground in close to the cutting edge) does help to keep cut material from sticking to the knife.The best feature, however is the light weight. This blade feels significantly lighter in the hand than most comparable knives I have used, and I find that makes this knife a real pleasure to use.What's not to like? It's nimble, ergonomic, sharp as hell and even pretty modestly priced.

After less than a year the Gantons have been reached and it no longer can be sharpened
I loved this knife for the year it was sharp. The handle is super comfortable for me with a disability. However, right now i have reached, what I think are called "gantons" the ridges in the knife. It no longer can be sharpened properly. Instead of offering me a new knife the comppany is offerng me to send them my $40 knife to them to be sharpened. Anyone who uses the knives as much as I do, knows than one sharpening, on a knife which I have to send to the company, is absurd. Hats off to you Dexter Russel, for not standing behind your knives!!

Outstanding knife!
This is my second Dexter-Russell V-LO 7-inch Santoku knife, even though the first one is still in service. I've owned high-end, ultra-pricey knives, and this one is every bit as good if not better. It is a superb weight, not too heavy, not too light, and the blade is sharp straight out of the package and retains its sharpness for an incredibly long time. Surprisingly, I have only sharpened my first knife once, and I've had it for a couple of years and have used it daily. The handle of this knife is very comfortable too, with a pleasing grip. Take good care of your V-LO Santoku knife and always hand wash it -- it will give you many years of excellent service in return.

Excellent knife
I just got this knife a few days ago for Christmas. I'm surprised at how sharp the blade is right out of the box. I've had no trouble at all cutting through some large steaks I made for dinner. The knife is well-balanced and extremely comfortable to use. The size is perfect for my needs at the moment however I think I'm going to buy some of the other knives that Dexter-Russell makes. I also really appreciate the fact that this product is produced here in the USA which is all too uncommon anymore. I'll be recommending this knife to my friends and family.

I do mobile catering & my knife portfolio always goes with me. That having been said, of all of the high-end knives within that sheath. it's the Dexter 7" Santoku that gets pulled first. If all of my knives were somehow lost, it would be this one that would be replaced first. Dexter-Russell bullet-proof blades with an innovative handle, light in weight & a positive grip. Perfection.

Sharp product
So far working very well. Wife is pleased with quality and use. Chef daughter urged her to purchase one for safety!
