Is there anyway to fix the lag? i am using this connected to a focusrite scarlett out of the headphone jack. is there a setting to fix this?

Not likely with bluetooth. A UHF system will expensively work. Or hard wire.

Does the transmitter pair to an iPhone

Yes it does have two of it and few different iPhones are paired to them
