This is amazing. This book contains every possible French pastry but even better than that, it's so well written it gives the reader the assurance the making these traditional treats (and a few modern variations) is a very real possibility for the experienced American home baker. This is not a book for a beginning baker,except,perhaps to serve as a mouth-watering inspiration. It seems to me that the most daunting challenge is learning to meticulously weigh ingredients. For most of us who have been baking for any length of time, measuring with cups and spoons has become second nature...so much so that switching to a scale requires bullet-biting leap of faith. But if that is all that is keeping one from baking such beautiful and delicious desserts and treats, it seems well worth the effort. Even many new American cookbooks are making the switch to weight-measuring ingredients. So go buy that scale and this book! And with Valette's step by step guidance, you will be baking French pastries to the delight of family, friends and yourself!

Lots of photos to aid in understanding classic recipes
This book covers classic French Pastries in a easy to understand format. There are many photos to aid the written directions which is always a help. Just like a following a rout to a destination there are many ways to get there and each master baker will give their own techniques; along the way each cook finds what works in his/her kitchen and style. The book first lays out the basic recipes and then combines the recipes in different ways to produce Various classics. To me it is an excellent guide to some fine pastries.

If you like to bake, this is the book for you. It is the most complete and well explained book, with a lot of pictures with each recipe. This is the book I was looking for and I love it!!

This mini ebook is filled with techniques that are easy to master when done with patience and passion to make French pastries and desserts. She also gives tips and handful of techniques to make different types of desserts. I like how she shows pictures as a step-by-step approach and has clear instructions how she makes the desserts.

Confusing, but looks like nice recipes
Each recipe I've looked at has you "refer to page 13) or something like that once you get past a few basic recipes. The croissant recipe referred me back several times and then there are sketches and photos to show you how to attack this stack. The good thing, lots of pictures, the bad thing, the sketch looks nothing like the photo. If I somehow missed how to fold from the back and forth looking up things, you end up with a butter leak running out the sides because I never READ how to fold so that it would be closed. I have since watched LOTS of YouTube videos on the correct way to fold them over. My dislike mostly, so far, is having to go back and research a recipe that is supposed to be the reason I bought the book, for the recipe, not half, then reference, then if there is a filling, you have to go reference it in another section that may or may not be mixed in with yet another recipe.I'm not saying it's a bad book, it is just a workout on finding the whole recipe for a filled pastry.. I'm attaching parts of a croissant recipe.. The first 2 are the recipe, then you have to refer back to the very first recipe in the book for the diagram, then after all these folds, rolls & turns and and about 4 pages later, you see photos... that look nothing like the diagram..Just giving you a sampling of what to expect from the book.. Enjoy, laugh through it, or nervous breakdown.. I'm still not sure which.. But I will be jumping back to the croissant soon.. Hope I helped you a little & HAPPY BAKING!!! :D

Good book
Complex bakes explained well. I liked the 1st section which was the basic building blocks of baking. Ie different pastries and cake mixes. The rest of the book refers to these as necessary.

Brilliant, highly recommended.
Wonderful! This is a splendid book. It has clear instructions and clear photographs of each step along the way, ideal for a novice pastry cook like me! Everything in it looks delicious and nothing is very scary, sonthis book has given me confidence to step into the patissier' s realm. Brilliant.
