Q: Are the side pockets large enough to fit a water bottle?

It depends what size water bottle you use. I have found that the 8.45oz/250ml VOSS water bottle fits perfectly in the side pocket of the mini!

There's a label on the inside where you can write in a name.

Q: the sizing says one size then one-size what is the difference?

There is no difference. You can only pick the one choice "one-size". It's about 9 1/2 inches left to right when full, 11 inches tall and 5-6 inches deep front to back.

Q: is the pink/air-blue more on the pastel side?

It is a little darker than a pastel pink, think more of a dusty rose
