What's the point of this? Does flipping truly make a better waffle? How so?

No, it really doesn't. I have a cheap waffle maker that doesn't flip and it cooks perfectly on both sides. I had this flip waffle maker at one time and the handle connections broke while trying to wash it. It maybe had a dozen uses before breaking.

There are actually 3 products pictured - one with red and green, one with green only, and the one with the dial and power in the base. Does the product monitor the waffle for doneness or is the ready indicator based on elapsed cooking time?

The ready light indicates w/I is ready and hot . The only way to determine if the waffle is cooked to proper doneness if watch steam, steam means cooking NO steam is cooked and ready ( From Manuel) makes great waffles.

How thick are the waffles?

Thicker than the frozen kind. I use a waffle mix and add milk instead of water too.
