This is a thick, dark, concentrated paste, not a thin broth or dry bouillon. It looks and smells rich, and a little goes a long way. The jar says it makes up to 52 cups of stock, so this 11 oz jar should last us through quite a few meals.Tonight I used it in a Royal Blend rice I was making for the first time. The rice directions called for salt, but instead I added some of this roasted beef base to the cooking liquid along with olive oil. It gave the rice the darker beefy color you can see in my photos and added a deep, savory roasted-beef flavor without overpowering the different grains in the rice. The flavor tasted much fuller than I would have gotten from simply adding salt.I served the rice with homemade salmon croquettes, chow chow, pickled onions and pickled carrots. I made the amount listed on the rice package for three adults, and my husband enjoyed the rice enough to go back for more. That tells me this will definitely be something I reach for again.What I especially like is the versatility. Besides using it to season rice, I can see this being useful for beef soups, vegetable soup, stew, chili, gravies, sauces, beans and anything else that needs a richer savory base. Because it is concentrated, I can also control how strong I want the flavor instead of opening an entire carton of broth when I only need a little.I also like the durable, sturdy jar and screw-on lid are another plus.
