Tarka Dhal (Red Split Lentils) Serves 4 You will need: 1 large onion (finely chopped), 400g Red split lentils, 1 litre of water, 2 tablespoons plus 2 teaspoons spice blend, Vegetable oil, 2 teaspoons salt, Lemon juice (optional), Fresh coriander. Method: Place washed lentils in a pan with the water and salt. Bring to the boil then simmer for 20 minutes. Mash until smooth in texture. If it is too thick and dry add extra boiling water until desired consistency is achieved. Whilst the lentils are cooking add oil to a pan and fry the onions. Turn down the heat, add more oil plus spice blend, fry for a few minutes ensuring spices do not burn. Turn up the heat, when oil is hot pour the onion mixture over the cooked lentils. Stir. Add lemon juice, garnish with coriander. Serve with boiled rice or as an accompaniment to other curry dishes.\n\n
