Could you use this to cover up a ceiling in an RV or Camper?

These tiles are made to work in a 15/16" grid system. They are not recommend to apply adhesive to and use as a direct mounting option. They are PVC so they will have some flexibility to them, but for installation they should remain flat as you would expect in a grid system. It would not fit properly if left to bent or flexed in any way.

can these be used on walls?

These tiles are made of PVC and meant to be used in a grid system. Assuming that you intend to adhere them to drywall, I would say that the seams from tile-to-tile would not be precisely straight, so there may be some adjustments required. More importantly, they are smooth which would not be an ideal surface to apply adhesive onto. A bit of sanding on one side would likely be required for cohesion. Though I haven't attempted using these on a wall, I think doing these two things would provide you with what is necessary to do so.
