This product is used to make gumpaste and fondant, does it add more elasticity? I have a recipe that calls for corn syrup. Could this product work?

Hello, I am a pastry chef and It really depends, glucoses can be made from other sources (not corn). I have this container and the ingredients do not specify. Corn syrup is obviously o oh made from corn. Depending on what you are making really depends on if you can substitute it or not. I personally would just give it a try. You can always recipe test it in a small amount. Glucose being an inverted sugar will help retain moister, and help prevent crystallization. It can help with elasticity. If this doesn’t work as a substitute you can 100% use this to make chocolate truffles, and ice cream(perfect for the summer). Hope this helped!
