A neighbor of mine started using French flour because it Europeans ban ingredients that are used in American flour. Also, American wheat is picked before it ripens to maturity, so we have autoimmune responses to domestic flour. First, I made cookies, which came out great. Then, I made Irish soda bread. The flour was wonderful. I can use it without worrying about health damage.

Definitely upped my baking!
I'm resigned that I'll never bake like Dominique Ansel but at least I can use the same ingredients. I've decided that I need to perfect the art of laminating dough so I may as well use the best. It's a work in progress but I definitely see a difference using this pastry flour over the usual grocery store variety.

Not suitable for everyone with gluten sensitivity
The flour itself was amazing and yielded the softest pancakes. However, I bought it to check if you daughter's gluten sensitivity gets triggered by this flour. Unfortunately, it did cause inflammation and other health issues within a day of her having these pancakes. Overalls though, great flour!
