Milk and Strawberry Galatine

I grew up in Italy where these milk tablets are as ubiquitous as jolly ranchers in the U.S..The product itself has a rich national history - during WWII dairy farmers were required to convert a percentage of their milk to powder form to be distributed to the Italian Army soldiers in their rations as powdered milk is non perishable and highly nutritious. When the war ended, there was a significant surplus of powdered milk so confectionary companies developed a product that would use up the excess and the result were these delicious tablets made of 80% pure milk and sweetened with honey, and mild cheese(yogurt) enzymes for flavor complexity. I feel like these are kind of an acquired taste; people either love them or hate them. Personally, these are my favorite sweet treat. Not only do I enjoy the dry crumbly texture (think astronaut ice cream) but eating them invokes a pleasant feeling of nostalgia. My 3 teenaged daughter’s hated these at first but now they can’t get enough of them, so I have to stash a bag of them in my nightstand drawer. Lol The original plain galatine are my favorite, but I do love the strawberry and chocolate chip variety as well. It’s so great to finally be able to purchase these on amazon so I don’t have to order them from Italy and pay a small fortune in shipping!
