What is the gap (in mm) underneath the solar panel with these brackets?

Can’t say exactly as caravan at dealers but from memory approximately 25mm

Can u bolts be used with these to fix to cross bars? What size please?

I purchased a 15W 4LED Solar lighting System and fell for the "con" that says most people buy the recommended Z mounting brackets. When they came they could not be used as they were suitable for mounting panels probably 8 times the size of mine [ 16"x10"] I contacted the Lighting System supplier and they said the brackets were "not actually supplied or recommended by them" but Amazon. Hope this helps in some way.

Would anyone happen to have the space between the mounting holes?

Yes on my installation I own the space between the mounting holes. Both front to back and laterally.

Are the self drilling screws secure enough for my campervan roof? the manufacturer recommend "well nuts" for "rv" roofs. do rvs have grp roofs?

The perfect solution mate is to get a roof rack (low profile) then attach them to that. You can then run the wires along the inside of the rails and zip tie them. This way they are hidden and very secure. Also this way you can remove them if needed without leaving any holes in the roof (if you sell the camper in the future).
