I want to use it for holes made by mice . Do you know if mice can eat it and make hole again?

the Larry St.Germain response was incorrect!! Mice will eat through most Spray Foams, get Great Stuff Pest Block Spray Foam, it is a lower expansion foam but has a very bitter tasting additive that mice and rats will not eat, I am a retailer and a user of both foams, mice definitely eat through my regular foam, replaced with Pest Block and problem solved as per Manufacturer.

Can I use this for a leaky door in the winter then remove it in the Spring? Or will it permanently seal the door shut?

I have used a similar product to seal a door casing. It expanded too much and the door wouldn't close after. Use caution around doors and windows.

Is this good to use to fill huge gaps behind plaster walls? I have no insulation behind them and don't want to rip them down. To much work and mess.

I don't know how big your "huge" is, so you may need a very large number of cans. When you start one can, try to finish it immediately, since after a break the tube hardens and may not be reusable.
