Is this a good wood carving knife? Like could I carved spoons with it?

Absolutely! The earlier version of this was my go-to carving knife for a long time, and I still use it occasionally. Understand that the “bowl” of the spoon is easier to carve with a hook knife (or similar, ie “scorp”, etc). It will do a great job of general shaping, and a passable job of carving the bowl.

What's the difference between this and the Craftline Pro C?

I think the craftline has a rubbery insert in the handle, 5.11 is solid plastic

Is there a recommended oil for this? I'm going to use it for backpacking purposes like cutting small branches and removing bark.

You can cold blue the blade using Permablue paste. Won't completely stop rust, but slows it down. You'll still need to oil the blade, esp the cutting edge, as it won't be blued. Have been using vegetable oil, but am switching to food grade mineral oil. NEVER had a rust issue until I moved to Houston.

What is the blade thickness in fractions or decimal please, NOT metric?

The 2mm blade is approx 1/12 in (0.787 in). The 3.2mm blade is approx 1/8 in (0.12598 in). You can put a good scientific calculator with built-in unit converter on your smartphone.
