High protein, plant-based pasta, absolutely delicious!!
This is the perfect replacement for traditional pasta.. it's high in protein, and doesnt get mushy or gross if you cook it for a tad too long!!I love that this is made from beans, and plant-based.. this pasta cooks really quickly and it easy to season, or eat with organic pasta sauce!I buy cases of this to keep on hand for quick, easy meals since the high protein content keeps me full for a long time!This is a great value for the price, and I always keep a few boxes in the cupboard.. definitely worth trying this out if you're searching for a pasta replacement!This also has a slight flavor of its own that I personally really enjoy, and the texture is great!

I LOVE THIS STUFF!!!
I LOVE this product (Edamame and Mung Bean Fettuccine). LOVE. I've tried a number of alternative pastas looking for the perfect low carb one. They've all either had too many carbs and not enough fiber to offset, completely fallen apart once cooked, or the texture and/or flavor were all wrong. But this stuff is PERFECTION.But, be aware: It's NOT pasta. If you go into it expecting it to be exactly like regular pasta, you'll be disappointed. Adjust your expectations, and it works great. To me, it is like a chewier al dente texture, which I find appealing because it holds up under even the thickest sauces and in the heaviest casseroles. It does NOT have a bean-y taste; it's pretty neutral flavor-wise, which is why I've happily used it with bolognese, veggie marinara, in turkey tetrazzini and tuna casserole, chicken and broccoli alfredo, etc. Only thing I haven't tried is "buttered noodles," because I'm not a fan.The super-high fiber content might be tough for some to adjust to digestion-wise if that's not been a regular part of their diet, but fiber is essential for me doing my low carb thing. This has the highest fiber count by far of any pasta, regular or otherwise.What I most appreciate is that this (along with spaghetti squash!) has given me the freedom to enjoy sauces and casseroles again, without fear of throwing off my numbers. I can make some regular pasta for my Italian-food-adoring husband, a little of this for myself, and we can go to town on our chicken parm and marinara together. It's a little pricey, but the freedom to eat things I love again, but in a healthier way, is worth everything to me. Again, I LOVE this stuff. I wish they'd make lasagna noodles! Come on Explore Cuisine, give the people what they want!

Much nicer than I expected--cook up chewy and work well with sauces. TONS of FIBER
First off, if you like a bit of an earthy taste to your noodles, this will work fine for you. If you are expecting it to be like wheat or rice or corn pasta--not so much.I liked the simplicity of ingredients (mung beans + water) and the very high fiber (11 grams per serving), plus lower carb and higher protein than regular grain pastas. I figured I'd take a risk. Know what? I like these.Because some reviewers had used the term earthy--rightfully so--I boiled up a batch (raw vegans can just soak them for a day). I sauteed artichoke hearts and fresh mushrooms in EVOO and garlic, then just tossed in these noodles and added parmesan. Very nice. I enjoyed them a whole lot. I cooked them till they were al denter and I like the chewiness of the texture. I will be trying these with pesto and red pepper sauce, too.A very pleasant surprise. I like em. I won't say they are like real pasta. They are simply a different sort of noodle for folks who enjoy that, and I do.If you aren't sure if it's for you, just order ONE from some vendor. Don't buy this huge quantity.Oh, you can eat these raw as a snack with a dip. My sister and I tried them raw before I cooked up some. We both agreed they were kinda interesting uncooked--crunchy. They might work fine for folks who can digest these okay raw.

ABSOLUTELY FANTASTIC!!!!!
Actually saw this pasta on another website, made the purchase there (not thinking to check Amazon). When it arrived a few days later I decided to make a huge pot of organic sauce: sautéed baby sweet peppers, sautéed tomatoes & onions w/thyme, cubed baked chicken breasts w/basil & parsley in olive oil, sautéed mushrooms w/rosemary & balsamic vinegar, raw Kalamata olives, raw Sicilian olives, artichoke hearts. Cooked up 6 bags of this pasta in a 12 qt. pasta pot, drained it, and dumped in the sauce. I served the pasta & sauce with mild white raw cheddar cheese oven melted over the top.My wife and I were BLOWN AWAY by the taste and texture of this pasta. Personally I did not notice any "mung bean flavor" as reported by other reviewers. The pasta had a slightly meaty texture which would seem to imply overly dense, but it was not. My wife and I both had two large bowls, because we couldn't get enough. Surprisingly we did not feel bloated even though we surely ate more than we probably should have. In my opinion this pasta is far superior to other gluten free pastas, because it holds together, and doesn't seem to be a fragile as gluten free corn pasta or gluten free quinoa pasta. My huge pot of pasta & sauce also was great the next few days being heated and served as a left-over. ABSOULTELY FANTASTIC!The reason I'm writing this review on Amazon is because when I went to purchase more pasta at the website of my original purchase, the pasta was out-of-stock on back-order. Then it dawned on me to check Amazon. To my pleasant surprise, the pasta was in stock, and at a better price. So I purchased 12 bags, and decided to write this review.Now if someone could only come up with a decent gluten-free organic bread!

Very good
This is the best gluten-free fettuccini I’ve found. It has protein, and a flavor that works with a lot of sauces. The noodles cook in 5-7 minutes, too, which helps with last minute dinner choices. I use leftover noodles with truffle oil and peas for a quick breakfast after an intense workout. The noodles are a bit expensive but worth it for the fkavir and protein.
