Tofu is notoriously difficult to dehydrate properly at home for the purpose of backpacking. I was happy to find this product from Japan on Amazon. The blocks of freeze-dried tofu are very light and the shape is efficient and compact for backpackers. It rehydrates instantly in warm water, puffing up like a sponge. The texture is a bit spongy and is different from fresh tofu. However, like regular tofu, it takes up the flavor of broth or seasoning and is a good source of protein.

The texture and flavor is surprisingly good when re-hydrated while backpacking. However, it took over 5 weeks get this delivered, and there was no shipment tracking.

I soaked the blocks in water and they immediately plumped up and would have been the perfect food..stores light as a feather and is instantly hydrated. But afterward, I'd break out in red bumps all over my body that itched like fire ants stinging me. I was in agony. Luckily, it faded quickly over the next two days, but I hastily dumped the food in the garbage.But if someone isn't sensitive to the unknown Japanese spice, it could be a great food storage solution.
