Q: Can you attach Olympic size plates? If not is there an adapter?

Yes. There is an adapter for olympic size weights. But this must be attached to a cinderblock or steel wall, because I had half the frame bolted to sheetrock with anchors, and the other half to a stud and it ripped from the wall with only 25 lbs.

Q: How high do you mount the pulley for a 5 ft tall person?

It's not really based on the height of the user. The instructions list the height to install it at as it is based on the length of the cables used for the pulleys. At the recommended height a 5-foot person should be able to reach the top pully for lat pulldowns without issue.
