How long does this last before I have to replace it for functional or cleaniness reasons?

Mine lasted about two years before the middle bristles bent. I was going to order another one, but hear it many not last a year. It is a shame they don't make it with replaceable heads. Yet they claim to care about the environment.

Are the bristles soft or hard?

They are a good medium. Not super stiff, but not super soft either. Just perfect.

Can I use this on stainless steel pans/pots without worrying about stratching/damaging the surface?

For sure with the brush side. I have Circulon pans and it works great. The backside of the top portion of brush has a little scraper built into the top. I only use that when I absolutely feel I need it. My pans have never been damaged. I will definitely get another brush like this when this one wears out!

how long are the bristles?

The bristles are about 2-3”. The unit itself is about 8-9”
